1 cup unsalted butter (softened)
1 ½ cups brown sugar
1 large egg
2 teaspoons pure vanilla extract
1 cup pumpkin puree
2 cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon Diamond Crystal Salt Co.® Baking Salt™
2 teaspoons ground cinnamon
¾ teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
1 cup white chocolate chips
½ cup chopped walnuts (optional)
Preheat oven to 325°. Line a 8X8-inch baking pan with a parchment paper sling.
Cream butter and sugar together in a large bowl. Add egg, vanilla, and pumpkin, and mix until combined. Add flour, baking soda, baking salt, cinnamon, ginger, cloves and nutmeg, and mix until just combined. Gently fold in white chocolate chips, and transfer mixture to prepared pan. Top evenly with walnuts.
Bake until golden-brown and a toothpick inserted into the center comes out clean, about 30-35 minutes. Cool completely before serving. Enjoy!
