4-Ingredient Cheesy Fish Crackers

INGREDIENTS

1 cup shredded sharp cheddar cheese (packed)
¾ cup (90 g) all-purpose flour
4 tablespoons cold unsalted butter, cut into cubes
½ teaspoon Diamond Crystal® Baking Salt
1 tablespoon cold water
Diamond Crystal® Kosher Salt, for sprinkling

DIRECTIONS

Combine cheddar, flour, butter, baking salt and water in a food processor, and pulse until mixture
resembles coarse crumbs.
Press dough together into a flat disc and wrap tightly with plastic wrap. Chill until firm, at least 30
minutes.
Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
Roll dough out on a lightly floured surface to about ⅛-inch thick. Use a small fish-shaped cutter
(or any mini cutter) to cut out crackers. Re-roll scraps and continue cutting until all dough is used.
Transfer to prepared baking sheet and sprinkle with kosher salt. Chill at least 15 minutes.
Bake until edges are golden and crisp, about 10-12 minutes. Let cool completely before serving.
Tip: Cool completely and store in an airtight container at room temperature for up to 5 days.
