1 ½ cups (201g) self-rising flour
1 cup plain Greek yogurt
¼ cup unflavored protein powder
1 teaspoon Diamond Crystal® Baking Salt
1 egg beaten, optional
Preheat oven to 375°F. Line a baking sheet with parchment paper and set aside.
Combine self-rising flour, Greek yogurt, protein powder and baking salt in a large bowl until a dough forms.
Turn dough onto a lightly floured surface and knead just until smooth and all ingredients are evenly distributed.
Divide dough into 4 equal balls. Using your thumb, poke through the center of each ball and gently pull outward, creating desired bagel shape.
Place bagels onto prepared baking sheet and brush tops with beaten egg.
Bake until bagels are golden-brown and an internal temperature of at least 190°F is reached, about 25-30 minutes.
Cool slightly before slicing, toasting and serving.
Tip: Fold cinnamon and raisins, asiago cheese, dried fruits or olives and herbs into your dough, as desired, then top with desired toppings, like sesame seeds, poppy seeds, shredded cheese, herbs, kosher salt, or everything bagel seasoning
