1 large apple, finely chopped or grated, plus more for topping
1 tablespoon unsalted butter
1 teaspoon ground cinnamon, divided, plus more for topping
1 cup old-fashioned rolled oats
1 cup whole milk
½ cup plain Greek yogurt
1 tablespoon chia seeds
1 tablespoon maple syrup
¼ teaspoon pure vanilla extract
½ teaspoon Diamond Crystal® Baking Salt
Pepitas, optional, for topping
Combine apples, butter and ½ teaspoon of cinnamon in a small sauce pan over medium-low heat. Cook until apples are tender and golden-brown, about 3-4 minutes.
Combine oats, milk, yogurt, chia seeds, maple syrup, vanilla, baking salt and remaining cinnamon in a large bowl.
Divide mixture evenly into 2 medium jars or containers with resealable lids, alternating layers of oat mixture and apple mixture, reserving some apple for garnish.
Cover and refrigerate for at least 4 hours, or overnight, until oats are soft and the mixture is thick.
Top with pepitas, extra apple mixture and a sprinkle of additional cinnamon.
