1 (8 pound) spiral-cut bone-in ham
1 cup brown sugar (packed)
½ cup bourbon
¼ cup honey
¼ cup Dijon mustard
½ teaspoon Diamond Crystal Salt Co.™ Kosher Salt
¼ teaspoon ground black pepper
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground cloves
Preheat oven to 325°F. Place ham in roasting pan, cut-side-down. Cover with foil and bake until a meat thermometer reads 145°F, about 50-60 minutes.
Meanwhile, combine brown sugar, bourbon, honey, mustard, kosher salt, pepper, cinnamon, nutmeg and cloves in medium saucepan over medium heat. Bring mixture to a simmer, stirring occasionally until sugar is dissolved and glaze forms, about 5 minutes.
Remove ham and increase oven temperature to 400°F. Remove foil and brush ham generously with glaze, covering the entire surface. Return ham to oven and bake until glaze is caramelized, about 20-30 minutes.
Remove ham from oven and brush with any remaining glaze. Allow ham to rest at least 10 minutes before serving.
