Cherry Tomato Confit

INGREDIENTS

2 pints cherry tomatoes, washed and dried
1 cup olive oil, plus more for drizzling
6 cloves garlic
1 teaspoon Diamond Crystal Salt Co. Kosher Salt, plus more for garnish
½ teaspoon ground black pepper
8 ounces burrata, torn into pieces
Fresh basil, for garnish
Crostini, for serving

 

DIRECTIONS
Preheat oven to 275°F.
Combine tomatoes, garlic, olive oil, kosher salt and pepper in large baking dish and toss to coat.
Bake about 2 hours, or until tomatoes are softened and bursting.
Arrange torn burrata on serving plate and spoon tomato confit over top. Garnish with basil and additional kosher salt. Drizzle with additional olive oil and serve with crostini.
