1 ripe avocado, halved, pitted and peeled
1 cup packed fresh spinach
½ cup packed fresh basil
½ cup packed fresh parsley
2 tablespoons chopped fresh chives
1 lemon, juiced
1 teaspoon Diamond Crystal Salt Co.™ Kosher Salt
½ teaspoon freshly ground black pepper
¼ cup olive oil
Combine avocado, spinach, basil, parsley, chives, lemon juice, salt and pepper in blender or food processor.
Pulse until spinach and herbs are broken down, scraping down sides as necessary.
With blender running, gradually add olive oil until completely smooth.
Tip: Use immediately to dress your favorite salads, or transfer to an airtight container and
refrigerate until ready to use.
