For cookies:
¾ cup unsalted butter (softened)
½ cup brown sugar (packed)
½ cup granulated sugar
1 large egg
1 tablespoon pure vanilla extract
2 cups all purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
¼ teaspoon Diamond Crystal Salt Co.® Baking Salt™
For frosting:
8 ounces cream cheese (softened)
1 ¼ cups powdered sugar
1 teaspoon pure vanilla extract
¼ cup granulated sugar
Preheat oven to 350°. Line a rimmed baking sheet with parchment.
For cookies: Cream butter, brown sugar and granulated sugar together in a medium bowl with a hand mixer. Add egg and vanilla, and mix until combined. Slowly add flour, cornstarch, baking soda and baking salt, and mix until just combined.
Portion dough into 2-tablespoon-sized balls. Place dough balls about 1-2 inches apart on prepared baking sheet and flatten slightly.
Bake until edges are light golden-brown, about 8-10 minutes.
Allow cookies to cool 2-3 minutes, then transfer to a cooling rack to cool completely.
For frosting: Meanwhile, beat cream cheese until smooth in a medium bowl with a hand mixer.
Slowly mix in powdered sugar and vanilla, mixing until smooth. Place granulated sugar into a small shallow bowl. Spread about 1 tablespoon of frosting onto each cookie, then press cookies, frosting-side-down, into granulated sugar. Torch tops of cookies until sugar caramelizes, and serve. Enjoy!
