Crispy Mozzarella Stuffed Meatballs

INGREDIENTS

2 cups panko breadcrumbs (divided)

¼ cup whole milk

1 pound ground Italian sausage

1 large egg

2 cloves garlic (minced)

2 teaspoons Diamond Crystal Salt Co. Kosher Salt

¼ cup chopped fresh parsley

32 mini fresh mozzarella balls

1/2 cup grated Parmesan

1 tablespoon olive oil

¼ cup chopped fresh basil leaves

Marinara sauce (warm, for serving)

DIRECTIONS

Combine 1 cup of breadcrumbs, milk, ground beef, egg, garlic, salt and parsley in a large bowl, and mix thoroughly to combine. Portion mixture evenly into about 32 pieces. Flatten each portion and place a mini mozzarella ball inside, encasing meat mixture around mozzarella into meatballs.

Chill meatballs for at least 20 minutes.

Preheat air fryer to 400°. Combine remaining Parmesan and remaining breadcrumbs in a small shallow bowl. Roll each meatball in the mixture.

Place into air fryer basket and cook until golden-brown and cheese is melted, about 10-12 minutes. Garnish with basil. Serve with marinara sauce.
