Easy Egg Brunch

Main Dishes
INGREDIENTS

4 Eggs

2 Tbsp Oil 

½ Cup Cherry tomatoes or thinly slice regular tomatoes

1 Handfull of spinach

Diamond Crystal Pink Himalayan Salt (to taste)

1 tsp Chili powder

1 tsp Black pepper

½ tsp Paprika

Mexican four cheese/mozzarella cheese (for garnish) 

DIRECTIONS

In a medium sized pan over medium heat, add 2 tablespoons of oil. Next add chili powder, paprika, black pepper, and Diamond Crystal Pink Himalayan Salt. Mix until combined and then add the tomatoes, allowing them to cook for 1-2 minutes before adding spinach. Mix and allow the spinach to wilt slightly before cracking open eggs one at a time over the vegetables.

Cover with a lid and cook for about 6-8 minutes depending on how you like your eggs cooked. Finish off with shredded cheese, Diamond Crystal Pink Himalayan Salt to taste and serve.
