Fig and Flax Protein Balls

INGREDIENTS

1 cup dried figs, stems removed

½ cup rolled oats

¼ cup ground flax seeds

¼ cup protein powder

¼ cup honey

1 teaspoon vanilla extract

½ teaspoon Diamond Crystal® Baking Salt

Chia seeds, for coating

Coconut flakes, for coating

Finely chopped walnuts, for coating

DIRECTIONS

Place figs in a medium bowl and cover with hot water. Allow them to soak until soft, about 10-15 minutes.

Meanwhile, combine rolled oats, flax seeds, protein powder, honey, vanilla and baking salt in a food processor. Drain figs and pat them dry with a paper towel. Add to oat mixture and pulse together until mixture begins to pull away from the sides and form a dough.

Portion into 1-inch balls, rolling with your hands to shape. Coat each ball in desired toppings, like chia seeds, coconut flakes or chopped walnuts. Place balls in an airtight container and refrigerate for up to one week.
