Grilled Elote Style Corn Ribs

INGREDIENTS

6 Ears of corn

¼ Cup Mayonnaise

¼ Cup Sour cream

½ Cup Cotija cheese (crumbled)

2 Tbsp Cilantro (chopped)

1 tsp Chili powder

1/2 tsp Cumin

1 Lime (juiced)

Diamond Crystal Sea Salt (to taste)

Black pepper (to taste)

DIRECTIONS

To a small mixing bowl, add mayonnaise, sour cream, cotija cheese, cilantro, chili powder, cumin, and lime juice. Season with Diamond Crystal Sea Salt, and black pepper to taste, then mix until combined and set aside.

Shuck the corn ears and remove any silk fibers. Once all of the silk has been removed, cut each ear of corn in half lengthwise, and then cut each half into 3 or 4 long, thin ribs.

Brush the corn ribs with the sauce, making sure to coat well. Preheat your grill to medium-high heat, and once hot, place the corn ribs on the grill. Cook for about 5-7 minutes on each side, until they are slightly charred and tender.

Once cooked, remove the corn ribs from the grill, and brush with any remaining sauce. Sprinkle with additional cotija cheese, cilantro, and lime juice if desired.

Serve immediately and enjoy!
