Grilled Watermelon Caprese

INGREDIENTS

For vinaigrette:
2 tablespoons balsamic vinegar
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1 clove garlic, minced
1 tablespoon chopped fresh basil
1 teaspoon Diamond Crystal Salt Co. Kosher Salt
½ teaspoon ground black pepper
⅓ cup olive oil
For salad:
1 small seedless watermelon, cut into 1-inch slices, rinds removed
8 ounces fresh mozzarella, cut into 1-inch slices
1 bunch fresh basil, stems removed
1 teaspoon Diamond Crystal Salt Co. Kosher Salt
½ teaspoon ground black pepper

DIRECTIONS

Make vinaigrette by combining vinegar, lemon juice, mustard, garlic, basil, kosher salt and pepper in a small bowl. Slowly stream in oil while whisking until completely smooth. Set aside.
Preheat grill or grill pan over medium-high heat. Grill watermelon slices until slightly charred and grill marks appear, about 2-3 minutes per side. Remove from heat and cut into quarters. Layer grilled watermelon slices onto a serving plate with mozzarella and basil leaves. Season with kosher salt and pepper. Drizzle with reserved vinaigrette and serve. Enjoy!
