3 cups chopped fresh or frozen and thawed fruit (apple, pear, peach, cherry, blueberry,
strawberry, pineapple, or a mix)
2 tablespoons honey or maple syrup
1 tablespoon lemon juice
¼ teaspoon Diamond Crystal® Kosher Salt
Preheat oven on convection setting to 200°F. Line a large, rimmed baking sheet with parchment paper.
Combine fruit, honey, lemon juice, and kosher salt in a blender or food processor.
Pulse until completely smooth.
Pour puree onto prepared baking sheet in an even ⅛-inch thick layer.
Bake until fruit is no longer sticky and feels dry to the touch, but still pliable, about 4-6 hours.
Remove from oven and let cool completely.
Cut fruit leather and parchment together and roll to make fruit roll-ups, or peel fruit leather from parchment and cut into strips for leathers.
Store between parchment paper squares in an airtight container at room temperature for up to 1 week.
