INGREDIENTS
1½ cups (180g) all-purpose flour
1 cup (120g) whole wheat flour
½ teaspoon baking soda
½ teaspoon
Diamond Crystal® Baking Salt
1 teaspoon ground cinnamon
½ cup unsalted butter, softened
⅓ cup brown sugar, packed
⅓ cup granulated sugar
¼ cup honey
¼ cup whole milk
1 teaspoon pure vanilla extract
Melted dark chocolate, optional, for dipping
DIRECTIONS
Whisk together all-purpose flour, whole wheat flour, baking soda, baking salt and cinnamon in a medium bowl.
Beat together butter, brown sugar and granulated sugar in large bowl until light and fluffy, about 2-3 minutes. Add honey, milk and vanilla, and mix until combined.
Gradually add dry ingredients to wet ingredients and mix just until a dough forms.
Divide dough in half. Flatten into discs, wrap tightly with plastic wrap and chill for at least 30 minutes.
Preheat oven to 350°F. Line 2 baking sheets with parchment paper and set aside.
Roll out dough on a lightly floured surface to about ⅛-inch thickness. Cut into rectangles or squares and place onto prepared baking sheets.
Prick each cracker with a fork or toothpick to create classic graham cracker dots.
Bake until golden-brown around edges, about 10-12 minutes. Let cool completely.
Dip half of each cooled graham cracker in melted dark chocolate and place on parchment paper until chocolate is set. Serve and enjoy!
