4 Tomatoes (cored and quartered)
1 Small Red onion (peeled and quartered)
3 Garlic cloves (peeled)
3 Jalapeños (stemmed and seeded to control spice)
1/3 Cup Fresh cilantro
3 Tbsp Lime juice
2-3 tsp Cumin
1 tsp Sugar
1 1/2 tsp Diamond Crystal Salt Co.™ Kosher Salt
15 Ounces Crushed San Marzano tomatoes (1 can)
4 1/2 Ounces Green chiles (diced)
Tortilla chips
Place the tomatoes, onion, garlic, jalapeños, cilantro, lime juice, cumin, sugar, and Diamond Crystal Kosher Salt in a food processor. Pulse until the contents are fine and well blended.
Pour in the crushed tomatoes and green chiles. Puree until mostly smooth.
Taste and adjust the seasoning to your liking. Keep refrigerated until you are ready to serve.
