Melon Prosciutto Bites

¼ cup honey
1 teaspoon Diamond Crystal Salt Co.™ Kosher Salt
1 lime zested and juiced
1 small cantaloupe, seeded and scooped into balls
1 small honeydew melon, seeded and scooped into balls
10 slices prosciutto, cut into thin strips
1 (8 ounce) wedge Gorgonzola dolce cheese, cut into ½-inch rectangles
Chopped fresh mint, for garnish


Whisk together honey, kosher salt, lime zest and juice in a small bowl. Place cantaloupe and honeydew melon balls in a resealable plastic bag and cover with marinade. Seal bag and refrigerate at least 30 minutes, or up to 2 hours.
Drain melon and discard marinade. Thread melon onto toothpicks followed by a folded slice of prosciutto and a slice of Gorgonzola. Place melon bites onto a serving plate and drizzle with additional honey. Garnish with mint and serve.
