Miso Shitake and Potsticker Soup

INGREDIENTS

1 tablespoon toasted sesame oil
1 teaspoon grated fresh ginger
2 garlic cloves, minced
6 cups vegetable broth
3 tablespoons white miso paste
1 tablespoon low-sodium soy sauce
1 ½ teaspoons Diamond Crystal® Kosher Salt
1 cup shiitake mushrooms, sliced
1 medium carrot, peeled and julienned
16-ounces store-bought potstickers, vegetable, chicken or pork
2 scallions, thinly sliced, for garnish
1-2 Thai red chiles, thinly sliced, for garnish
1 tablespoon sesame seeds, for garnish

DIRECTIONS
Heat sesame oil in large soup pot or Dutch oven over medium heat. Add ginger and garlic and cook until fragrant, about 1 minute.
Add vegetable broth and bring to a simmer, about 3 minutes. Whisk in miso paste until completely dissolved. Stir in soy sauce and kosher salt.
Add mushrooms and carrots, simmering until tender, about 5-7 minutes.
Add potstickers and cook according to package directions, simmering until cooked through, about 5-8 minutes.
Garnish soup with scallions, chiles and sesame seeds and serve warm. Enjoy!
