INGREDIENTS

8 ounces white, milk, or dark chocolate, finely chopped
1 cup heavy cream, divided
1 teaspoon light corn syrup, optional
¼ teaspoon Diamond Crystal® Baking Salt

DIRECTIONS

Place chocolate in a heatproof bowl and set aside.
Heat ¾ cup of heavy cream in a sauce pan over medium heat until steaming hot, about 3-4 minutes.
Remove from heat and pour over chocolate. Let sit for 1 minute, then stir gently, until smooth and fully combined.
Whip the remaining ¼ cup heavy cream in a separate small bowl with corn syrup and baking salt until soft peaks form.
Gently fold whipped cream into chocolate mixture until fully incorporated and no streaks remain.
Cover and refrigerate for at least 4-6 hours, or overnight, until set.
Tip: Use as a filling for tarts, layer in desserts, or pipe into truffles. For truffles, scoop chilled Namelaka and roll in cocoa powder, nuts, or chocolate glaze.
