Parmesan-Crusted Tortellini Bites

INGREDIENTS

1 cup grated Parmesan cheese
½ cup panko breadcrumbs
1 teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon crushed red pepper flakes
1 teaspoon Diamond Crystal® Kosher Salt
½ teaspoon ground black pepper
2 large eggs, beaten
1 (12-ounce) package cheese tortellini, cooked and drained
Chopped fresh parsley, for garnish
1 cup marinara sauce, warm, for serving

DIRECTIONS

Mix together Parmesan, breadcrumbs, Italian seasoning, garlic powder, onion powder, crushed red pepper flakes, kosher salt and pepper in shallow bowl. Place eggs in separate shallow bowl.
Dip each cooked tortellini into egg, allowing any excess to drip off. Then coat each piece of tortellini in breadcrumb mixture, pressing lightly to adhere.
Preheat oven to 400°F (200°C). Line baking sheet with parchment paper and lightly spray with cooking spray. Arrange tortellini in single layer on baking sheet. Lightly spray with cooking spray.
Bake for 15-20 minutes, or until tortellini are golden and crispy, flipping halfway through.
Garnish with parsley and serve hot, with marinara sauce.
Tip: To make in air fryer, preheat air fryer to 375°F. Lightly spray air fryer basket with cooking spray. Working in batches, arrange tortellini in single layer in basket, ensuring they do not touch.
Air fry until golden-brown and crispy, about 8-10 minutes, shaking halfway through.
Tip: Substitute mini ravioli for tortellini
