2 packets frozen unsweetened acai puree
1 large frozen banana
½ cup frozen mixed berries
½ cup unsweetened almond milk
¼ cup plus 1 tablespoon honey, divided, plus more for garnish
1 tablespoon chia seeds, plus more for garnish
2 cups roasted unsalted peanuts
2 tablespoons vegetable oil
Diamond Crystal® Sea Salt, to taste
1 cup granola
1 fresh banana, sliced
2-3 strawberries, sliced
½ cup blueberries
2 tablespoons unsweetened flaked coconut, toasted
Combine acai puree, banana, berries, almond milk, 1 tablespoon of honey and chia seeds in a blender, and blend until completely smooth. Divide mixture evenly between 2 bowls, and place into freezer.
Combine peanuts, remaining honey, vegetable oil and sea salt in a blender, and blend until smooth, scraping down the sides as needed.
Remove acai bowl from freezer and top with granola, banana, berries, additional chia seeds, and coconut. Drizzle with peanut butter and additional honey, and serve.
Tip: Store any extra peanut butter refrigerated, in an airtight container for up to 3 months!
