Pesto Brown Butter Scallops

INGREDIENTS

1 Pound Sea scallops

3 Tbsp Shallot (finely diced)

2 Garlic cloves (minced)

1/2 Cup Sherry wine

1 Sprig thyme

2 tsp Lemon juice

1/4 Cup Heavy cream

4 Tbsp Butter

2 Tbsp Vegetable oil

1/8 Cup Parsley (chopped)

Micro greens (optional)

Diamond Crystal Salt Co. Kosher Salt  to taste

Black Pepper to taste

Basil Pesto Ingredients:

1 Cup Basil leaves

1/8 Cup Pine nuts (toasted)

1 Garlic cloves

2 tsp Lemon juice

1/4 Cup Olive oil

Diamond Crystal Salt Co. Kosher Salt  to taste

DIRECTIONS

Season the scallops with Diamond Crystal Kosher Salt and set aside.

In a food processor combine all the pesto ingredients except the olive oil and begin to blend. Drizzle in the olive oil slowly and continue to blend until emulsified. Season to taste with Diamond Crystal Kosher Salt then set aside.

In a medium size pan on medium/high heat, add the vegetable oil and once shimmering add the scallops with the bigger side down. Sear the scallops until a crust has formed for around 2 minutes or so. Flip the scallops and turn down the heat, then add the butter and thyme. Baste the scallops with the butter and continue to cook until the scallops are cooked to your desired doneness. Remove the scallops from the pan and set aside.

For the pan sauce: In the same pan used to cook the scallops, turn down to medium/low heat, then add the shallots to the brown butter. Sauté until the shallots turn translucent then add the garlic. Continue to sauté until the garlic is fragrant for around 1 minute then add the sherry wine. Reduce the wine by half then add the lemon juice and heavy cream. Continue to simmer and reduce for around 5 minutes or until thickened, then finish with chopped parsley and season to taste with Diamond Crystal Kosher Salt and black pepper.

When serving the scallops, add a little bit of the pesto to the bottom of the plate and place the scallops on top of the pesto. Then top each scallop with the brown butter pan sauce and optionally garnish with micro greens. We recommend serving our lemon garlic broccolini on the side.
