Pineapple Sunrise Cocktail

INGREDIENTS

2 tablespoons Diamond Crystal® Kosher Salt
1 teaspoon finely grated lime zest
1 lime, cut into wedges
4 cups pineapple juice
2 cups white rum
2 cups ice
1/4 cup grenadine
Maraschino cherries, for garnish
Dehydrated sliced pineapple, optional, for garnish

DIRECTIONS

Combine kosher salt and lime zest on a shallow plate. Rim serving glasses with a lime wedge and dip into lime salt. Set aside.
Combine pineapple juice and rum in a large pitcher, stirring to mix.
Fill each rimmed serving glass with ice and fill about 2/3 with pineapple mixture.
Gently drizzle in about 1 teaspoon of grenadine to create a sunrise effect.
Garnish glasses with a maraschino cherry and slice of pineapple and serve.
