Prosciutto-Wrapped Breadsticks

INGREDIENTS

2 ½ cups all-purpose flour
1 cup warm water (105°F - 110°F)
1 packet instant yeast, about 2 1/4 teaspoons
¼ cup olive oil, divided
1 tablespoon granulated sugar
1 teaspoon Diamond Crystal® Baking Salt
12 slices prosciutto, cut in half lengthwise
8 ounces goat cheese, softened
½ cup heavy cream
2 tablespoons chopped fresh basil
1 teaspoon Diamond Crystal® Kosher Salt
½ teaspoon ground black pepper

 

 

 

 

DIRECTIONS

Combine flour, water, yeast, 2 tablespoons olive oil, sugar, and baking salt together in large bowl and mix until dough forms. Turn out onto lightly floured surface and knead until dough becomes smooth and elastic, about 5 7 minutes. Place dough in lightly oiled bowl and cover tightly with plastic wrap or damp cloth. Let dough rise in warm place until doubled in size, about 1 hour.
Preheat oven to 375°F. Line baking sheet with parchment paper and set aside.
Punch down dough and divide into 24 equal pieces. Roll each piece into thin rope, about 8-inches long. Wrap each rope with a half-slice of prosciutto, twisting around dough and place onto prepared baking sheet. Brush gently with olive oil. Bake until breadsticks are golden-brown and prosciutto is crispy, about 12-15 minutes.
Meanwhile, combine goat cheese, heavy cream, basil, kosher salt, pepper and remaining olive oil in food processor or blender, and puree until smooth, scraping down sides as needed. Transfer to a serving bowl and serve alongside breadsticks.
