INGREDIENTS
3 tablespoons
Diamond Crystal® Kosher Salt
1 ½ teaspoons ground ginger
4 ½ cups carrot juice
¼ cup fresh ginger juice, or 3 teaspoon grated ginger
½ cup fresh lemon juice
¼ cup honey
2 cups sparkling water or seltzer
Fresh mint sprigs, for garnish
Lemon slices, for garnish
DIRECTIONS
Mix kosher salt and ground ginger in a small bowl. Run a lemon slice around rim of each glass, then dip into ginger salt mixture. Set aside.
Combine carrot juice, ginger juice, lemon juice and honey in a large serving pitcher. Stir well, until honey is dissolved.
Fill prepared glasses with ice cubes and divide carrot juice mixture evenly among glasses. Top with sparkling water and garnish with lemon slices and fresh mint.
Tip: For a cocktail, add 1 ½ ounces of vodka per serving.
