Salted Lime and Cucumber Cocktail

INGREDIENTS

4 small cucumbers (sliced, plus more for garnish)

4 cups cold water

1 cup lime juice

¼ cup agave syrup

½ teaspoon Diamond Crystal Kosher Salt

1 jalapeno (thinly sliced, optional)

6 ounces tequila (divided)

4 sprigs fresh mint (for garnish, optional)

DIRECTIONS

Combine cucumbers, water, lime juice, agave and salt in a blender. Puree until smooth. Strain into a large pitcher using a fine-mesh strainer. Add jalapeno (if using) and refrigerate mixture until chilled, about 1 hour.

Add 1 ½ ounces of tequila to a small glass with ice. Top with cucumber mixture and stir to combine. Garnish with cucumber slices and mint sprig and serve.
