Savory Onion and Gruyere Waffles

INGREDIENTS

For waffles:
2 cups (240g) all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
½ teaspoon Diamond Crystal® Baking Salt
1 tablespoon chopped fresh herbs, like parsley, chives, thyme or rosemary, plus more for garnish
2 large eggs
1 ¾ cups buttermilk
4 tablespoons unsalted butter, melted
1 cup shredded Gruyere cheese
For topping:
2 tablespoons extra-virgin olive oil
1 bunch asparagus, trimmed and cut into ½-inch pieces
1 medium yellow onion, thinly sliced
½ teaspoon Diamond Crystal® Kosher Salt
¼ teaspoon black pepper
Fried eggs, for serving

DIRECTIONS
Preheat waffle iron. Whisk together flour, baking powder, baking soda, baking salt and herbs in large bowl and set aside.
Whisk together eggs, buttermilk and melted butter in a small bowl and gradually add to dry ingredients until just combined. Fold in Gruyere cheese and set aside.
Lightly grease waffle iron. Add about ¼ cup of batter and cook according to manufacturer's instructions, or until golden-brown, about 3-5 minutes. Transfer waffles to a low oven, set to warm or about 150°F, to keep warm.
Heat oil in skillet over medium heat. Add asparagus, onions, kosher salt and pepper, and cook until tender and slightly caramelized, about 8 minutes.
Top each waffle with vegetables and fried eggs. Garnish with fresh herbs and serve. Enjoy!
