Shaved Asparagus and Radish Salad

INGREDIENTS

2 tablespoons freshly squeezed lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey
1 garlic clove, finely minced
½ teaspoon Diamond Crystal® Kosher Salt
¼ teaspoon black pepper
3 tablespoons extra-virgin olive oil
1 bunch fresh asparagus, trimmed
5 radishes, thinly sliced
4 cups arugula or mixed spring greens
Shaved Parmesan cheese, for garnish
Toasted pine nuts, for garnish
Chopped fresh parsley for garnish

DIRECTIONS
Whisk together lemon juice, Dijon mustard, honey, garlic, kosher salt and pepper in a small bowl.
Drizzle in olive oil while whisking, until dressing is completely smooth. Set aside.
Shave asparagus lengthwise into thin ribbons using a vegetable peeler and place in a bowl of ice water to keep crisp, at least 5 minutes.
Combine asparagus, radishes and arugula in a serving bowl. Drizzle with dressing and toss gently to coat. Garnish with Parmesan, pine nuts and parsley
