Smoked Salmon and Dill Deviled Eggs

INGREDIENTS

6 large eggs
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
2 teaspoons lemon juice
½ teaspoon garlic powder
½ teaspoon Diamond Crystal® Kosher Salt
¼ teaspoon black pepper
1 tablespoon chopped fresh dill, plus more for garnish
2 ounces smoked salmon, flaked
1 teaspoon everything bagel seasoning
Pickled red onion, for garnish

DIRECTIONS

Place eggs in large saucepan and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover saucepan, turn off heat, and let eggs sit for 10-12 minutes.
Transfer eggs to an ice bath and let cool completely. Peel eggs and slice each in half lengthwise.
Scoop yolks from each egg into medium-sized bowl, reserving whites.
Mash yolks with fork until crumbly. Add mayonnaise, mustard, lemon juice, garlic powder, kosher salt and pepper and mash together until smooth. Add dill and gently fold in.
Spoon or pipe yolk mixture back into reserved egg whites. Garnish each deviled egg with smoked salmon, everything bagel seasoning, pickled red onion and additional dill. Refrigerate until ready to serve. Enjoy!
