2 medium sweet potatoes, peeled and shredded on the large holes of a box grater
½ cup bread crumbs
¼ cup grated Parmesan cheese
1 large egg, lightly beaten
2 tablespoons all-purpose flour
½ teaspoon paprika
½ teaspoon garlic powder
Diamond Crystal® Pink Himalayan Salt, to taste
Freshly ground black pepper, to taste
½ cup mayonnaise
1 tablespoon ketchup
1 tablespoon yellow mustard
1 teaspoon honey
Preheat air fryer to 375°F. Combine sweet potatoes, bread crumbs, Parmesan, egg, flour, paprika, garlic powder, pink salt and pepper in a large bowl, and mix until a loose dough forms. Form mounded tablespoon-sized balls into tater tots.
Lightly grease the air fryer basket with cooking spray and arrange tater tots into a single layer.
Cook until crispy and golden-brown, about 12-15 minutes, shaking or flipping halfway through.
Meanwhile, whisk together mayonnaise, ketchup, mustard and honey. Season with pink salt and pepper. Garnish tater tots with parsley and serve with special sauce.
