INGREDIENTS

2 Bunches Curly parsley

1/2 Cup Mint (finely chopped)

1/2 Cup Bulgar wheat (#1 grain)

1-2 Medium Tomatoes (diced)

1 Cup Green onion (finely chopped)

Olive oil

Lemon Juice

Diamond Crystal Salt Co. Kosher Salt to taste

Black Pepper to taste

 

 

DIRECTIONS

Place the bulgar wheat in a small bowl and soak in lemon juice and olive oil for 15-20 minutes until absorbed into the bulgar then set aside.

Take your parsley and remove the leaves from the stems. It can be time consuming but don’t skip this step! The stems add unwanted texture and should be avoided. Mince the parsley nice and fine.

Add minced parsley, mint, soaked bulgar, tomatoes, and green onion to a bowl. Season generously with Diamond Crystal Kosher Salt and black pepper. Mix and add fresh squeezed lemon juice and more olive oil to taste.
