For pudding:
½ cup chia seeds
2 cups coconut milk
2 tablespoons maple syrup
1 teaspoon pure vanilla extract
¼ teaspoon Diamond Crystal® Baking Salt
For puree:
1 cup pitted tart cherries, fresh or frozen and thawed, plus more for garnish
2 tablespoons maple syrup
1 tablespoon lemon juice
¼ cup toasted flaked coconut, for garnish
For pudding: Whisk together chia seeds, coconut milk, maple syrup, vanilla and baking salt until smooth. Cover and refrigerate at least 2 hours, or overnight, until thickened.
For puree: Combine tart cherries, maple syrup and lemon juice in small saucepan over medium heat. Cook, while mashing, until cherries are softened and mixture thickens slightly, about 5-7 minutes. Remove from heat and let cool completely.
To assemble, layer spoonfuls of chia pudding and cherry puree evenly into serving glasses or
bowls. Garnish with toasted coconut and additional cherries and serve.
