4-6 Corn tortillas
3-4 Tbsp oil (for frying)
2 Avocados
3 Tbsp Red onion (diced)
2 Tbsp Cilantro (chopped)
½ Lime (juiced)
½ tsp Diamond Crystal kosher Salt
1/3 Cup Refried beans
¼ Cup Shredded cheese
2 Cup Rotisserie chicken (shredded)
¼ Chopped tomatoes
Diamond Crystal Pink Himalayan Salt (to taste)
In a small bowl, mash your avocado then add cilantro, red onion, the juice of half a lime and Diamond Crystal Pink Himalayan Salt to taste. Mix until combined and set aside.
In a large skillet, heat 3-4 tsp of oil. Place the corn tortillas in the pan and fry for 1-2 minutes or until golden brown and crispy.
Once the corn tortillas are done, you can build your tostadas! to your fried tortillas add the beans, cheese, shredded chicken, tomatoes, and any other toppings you like.
Top with guacamole and enjoy!
