Viral Dubai Chocolate Bar

INGREDIENTS
2 cups chocolate chips (milk or dark chocolate)
2 cups kataifi 
2 tbsp unsalted butter
1/2 cup pistachio cream
2 tbsp tahini
1/8 tsp Diamond Crystal Baking Salt
A pinch of Diamond Crystal Kosher Salt
DIRECTIONS
Chop the kataifi into small pieces with a knife. In a large sauté pan, melt butter and then add the chopped kataifi. Toast for 5 minutes, or until the kataifi is golden brown and crispy.
Melt the pistachio cream in the microwave for 30 seconds. Pour the toasted kataifi into a large bowl along with the pistachio cream, tahini, and Diamond Crystal Baking Salt. Mix well.
Melt the chocolate chips in the microwave in 30 second increments, until fully melted. Pour 1 cup of the melted chocolate into the chocolate mold, making sure to coat the sides of the mold as well. Freeze for 10 minutes to set.
Once set, add the kataifi mixture. Then, freeze for another 10 minutes.
Pour the remaining melted chocolate into the mold, smooth with a spatula, and freeze for at least 30 minutes to fully set.
When the bar is set, carefully remove it from the chocolate mold. Drizzle the top of the chocolate bar with melted pistachio cream, and then top with a pinch of Diamond Crystal Kosher Salt Flakes.
