INGREDIENTS
14 frozen dumplings
1 can of coconut milk
1 lime
2 tbsp red curry paste
1 1/2 tbsp brown sugar
1/2 tsp sesame oil
2 garlic cloves, crushed
1 tsp oyster sauce
1/2 tsp Diamond Crystal Salt Co Kosher Salt Flakes
1/2 tsp black pepper
2 cups bok choy, chopped
Chopped scallions, for topping
Chili oil, for topping
White rice, for serving (optional)
DIRECTIONS
Preheat oven to 350ºF.
In a baking pan, pour in one can of coconut milk, juice from one lime, red curry paste, brown sugar, sesame oil, crushed garlic, black pepper, Diamond Crystal Salt Co Kosher
Salt Flakes, and oyster sauce. Mix all of the ingredients together and then mix in the chopped bok choy.
Place dumplings into the pan and bake on 350ºF for 25 minutes. Halfway through baking, spoon the liquid mixture from the pan over the dumplings to keep them from drying out.
While the dumplings are baking, cook white rice according to package directions.
When the dumplings are fully cooked through, remove from the oven and top with chopped scallions and chili oil before serving over rice.
