1 cup water
1 cup granulated sugar (plus more for coating)
½ cup chopped fresh rosemary (plus more sprigs for garnish)
2 teaspoons Diamond Crystal® Kosher Salt
1 cup fresh cranberries (for garnish)
2 ounces tequila
2 ounces coconut milk
1 ounces lime juice
1 ounces orange liqueur
Combine water, sugar and rosemary in a small saucepan over medium-high heat. Bring mixture to a simmer, stirring occasionally, until sugar dissolves completely, about 5 minutes. Remove from heat and allow mixture to steep 10 minutes before straining.
Coat the rim of a glass with rosemary simple syrup and then rim with salt. Fill glass with ice. Dip cranberries in simple syrup and coat with granulated sugar. Set aside.
Combine tequila, coconut milk, lime juice, orange liqueur, 1 ounce of rosemary simple syrup and a handful of ice in a cocktail shaker. Shake vigorously for 30 seconds and strain mixture into prepared glass. Garnish with sugared cranberries and rosemary.
Tip: Keep remaining rosemary simple syrup refrigerated in an airtight container for up to 1 month. Add syrup to tea, lemonade, or other mixed drinks!
